- At a minimum, a mobile food dispensing vehicle must be a mobile vehicle with protection from the elements and vermin.
- It must have the capacity to wash dishes – a three compartment sink at least – have a separate hand sink, and have equipment to maintain safe food temperatures (including refrigeration and steam tables).
- The vehicle must also have plumbing so that you can wash dishes and hands when operating and have either a water or sewer location or a commissary.
- The vehicle must have power to keep the equipment running – a generator or temporary connect to electricity.
- You must file an application for the license for your MFDV and, depending upon whether the truck has been registered before or modified since it was registered, you may also have to provide additional documentation including proof of water/sewer connection or commissary.
- After your application is approved, you still must have an inspection for sanitation and safety prior to getting underway.
